1 qt string beans 1 t salt 1 stalk fresh mint 1 T butter 1/8 t pepper Cut the beans fine, lengthwise, as for french beans. Plunge into a panful of boiling water and cook quickly. Drain,
add fresh boiling water, salt, and chopped mint. Cook a few minutes longer, until beans are tender. Drain, add butter, pepper, and salt and shake over the flame until piping hot. Serves 6. |
