1 squirrel or rabbit, dressed, washed and cut into servings 4 T butter 6 medium onions, sliced 1 T salt 1/8 t pepper a few peppercorns 1 1/2 c water 1 t vinegar Put layers of
meat in heavy pan or skillet. Add 2 T of the butter, onions, salt, pepper, peppercorns, and water and cook slowly over low heat until meat is tender. Add vinegar and remaining butter and cook 2 minutes longer. |
