8 potatoes
2 stalks celery, diced
1 large onion, sliced
2 hard-boiled eggs

Dressing:
2 beaten eggs
1 c cream
1/2 c vinegar
1/2 t salt

Boil the potatoes in their jackets, peel while warm, and dice. Beat the eggs, mix with the cream, add vinegar and seasoning, bring to a boil. Mix potatoes, celery, and onion and pour dressing over them. Slice hard-boiled eggs over top and serve.
