2 large potatoes, grated on medium grater (2 1/2 cups) 1 boiled potato, mashed (can be left over) 2 Tbsp. milk 1 egg, beaten 1/2 to 3/4 tsp. salt 6 Tbsp. oil Grate potatoes, add mashed
potato. Beat with milk, egg and salt to form a batter. Drop batter for 3 or 4 pancakes at a time into hot fat in skillet, using 2 tablespoons oil for each batch of pancakes. When firm on bottom, loosen with spatula,
turn to brown on other side. Continue until all batter is used. Makes 8 to 10 pancakes. Serve with cottage cheese, apple sauce, or optionally sprinkle cinnamon and sugar over it. |
