A delicious by-product of peach canning Fill quart jar with pits and skins of peaches (about 24 peaches needed for enough peelings for 1 quart.) Make a medium sugar syrup by dissolving 1 c sugar in 2 c
water. Pour boiling sugar syrup over peach skins, filling to within 1 inch of top. (Leave this space for freezing expansion.) Seal. Bury 8 inches underground until Christmas. Strain and serve. |
