1 cup stale breadcrumbs 1/4 cup milk 1 lb. beef, minced or a mixture of beef, veal and pork, minced 1 teaspoon slat 1 egg, slightly beaten 1 tablespoon chopped parsley 1 onion, chopped
4 oz. lard or fat Soak the breadcrumbs in the milk and when they are soft, squeeze them out thoroughly. Combine all the remaining ingredients except the lard and mix them well.
The mixture may now be formed into individual hamburgers or a meatloaf. Fry the hamburgers in the hot lard until they are brown on each side. Bake meatloaf in a greased baking dish in a preheated oven for 1 - 1
1/4 hours at 350F. Variations: Beefsteak a la Mayer, served with a fried egg on top of each hamburger. Beefsteak with onions, served with onion rings which have been fried in butter. Bremer Beefsteak. Omit the
bread and milk and use 1/2 cup of mashed potatoes plus 2 tablespoons of sour cream instead. |
