1 c lentils 8 c water 1 potato, diced 2 carrots, sliced or diced 1 onion, minced 1/2 c sliced celery 1 lb pork sausage link salt to taste 2 T flour 2 T butter Soak
lentils in water overnight, then cook until tender, adding more water if necessary. Add next six ingredients and cook about 20 minutes. Remove sausage and cool. Melt butter, blend in flour and add to soup as thickening.
Skin sausage, slice, and add to soup. Reheat and serve. |
