2 c dried lentils, cooked 1/4 lb american cheese 1 c soft bread crumbs 1 T onion, grated 1 t salt 1/8 t pepper 4 T soft butter Pass parboiled lentils and cheese through food
grinder. Add other ingredients and shape into loaf. Bake 45 minutes at 350 degrees, basting often with butter and a few drops of water. Serves 6. Serve w/Tasty Tomato sauce. Tasty Tomato Sauce: 3 T butter
1 clove garlic, whole 1 large onion, minced 1 quart cooked tomatoes, strained 8 sprigs parsley 1 sprig thyme 4 celery tops salt & pepper 1 t sugar Heat butter and drop garlic in for 2
minutes. Remove garlic and add minced onion; stir until light brown. Add strained tomatoes and drop into this the parsley, thyme, and celery tops tied together. SEason with salt and pepper and bring to a boil. Reduce
heat and simmer for 20 minutes, stirring frequently. Remove herbs and add sugar. Serve hot. |
