3 lbs flank steak 2 T butter 2 onions, chopped 1 t salt 1/8 t pepper juice of 1/2 lemon 2 T celery, minced 2 T carrot, minced 2 T green pepper, minced 2 t flour
1/4 c tomato catsup 2 c boiling water A flank steak has long fibers, therefore cut or score with a sharp knife. Melt butter in iron skillet and sear meat. Add lemon juice, then the chopped vegetables and
seasonings. Put all ingredients on top of steak. Dredge with flour. Pour boiling water around steak and cook in a slow oven (200 degrees) for 2 1/2 hours.its own rich gravy will be formed. This is a delicious way to fix
a cheap cut of meat. |
