Dough: 1/2 and 1/3 cups of flour 2 eggs salt 2 tablespoons of sugar 1/2 cup water Filling: 4 oz. Philadelphia 1/3 less fat than cream cheese (Neufchatel cheese) or Quark
2 tablespoons blackberry jelly (or any other kind) Soften cream cheese and mix with jelly, put aside. Mix dough ingredients to a thin pancake dough. Heat a little amount of oil in a nonstick pan, and add only
enough dough into pan to cover bottom while turning the pan from side to side. Cook pancakes until light brown on both sides. Take out of pan and spread the filling on it, roll up and it is done. Serve hot or cold.
Variation: Use only jelly as filling and pour vanilla sauce over it. |
