Cheese Cake, Germanic

Crust:

1/3 cup butter
1/2 cup granulated sugar
1 egg
1 1/4 cups flour
1/2 tsp. baking powder
pinch of salt
1 tsp. vanilla flavor

Make a dough and spread on bottom and sides of a greased and floured springform pan. Prick with fork, then bake 15-20 minutes at 350F (200C). Fill the crust with the cheesecake filling, bake one hour.

Cheese Cake Filling:

2 lb. Quark or farmers cheese
4 eggs, separated
1 1/2 cups granulated sugar
1 vanilla pudding & pie filling mix ( 3 1/8 oz)
1 /4 cup butter, melted
3 tbs. lemon juice
1 cup currants (optional)

Thoroughly mix cottage cheese with egg yolks, vanilla pudding & pie filling, sugar, butter, lemon juice and currants. Beat the egg whites till very stiff and carefully fold them into the cottage cheese mixture. Spoon the filling over the baked crust. Bake 1 hour at medium heat 350F (200C). Let cool in pan.
