4 celery roots water to cook 1 T lard 1 small onion, minced 1 t flour 1/2 t salt 1 1/2 T vinegar dash of pepper 1/2 c water Wash roots, cut in quarter-inch slices and cook
until tender. Drain. Brown onion in lard, blend in flour, add remaining ingredients and bring to boil. Pour over cooked roots and serve hot. |
